Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground turkey, light brown sugar, fresh sage leaves, kosher salt, smoked paprika, crushed red pepper flakes, fennel seeds, and garlic powder. Use your hands or a spoon to mix gently until all ingredients are evenly distributed.
  2. Shape the turkey sausage mixture into small patties, approximately 2-3 inches wide and about a half-inch thick. Keep them separate while shaping.
  3. Preheat your air fryer to around 375°F (190°C) for about 5 minutes.
  4. Arrange the patties in a single layer in the air fryer basket, lightly spray with olive oil cooking spray, and cook at 375°F for 10-12 minutes, flipping halfway through.
  5. Once cooked, remove the patties using tongs and serve them warm with your favorite breakfast sides.
