For the Sauce
  • 2 tbsp Olive oil Extra virgin is best.
  • 4 cloves Garlic Finely chopped.
  • 1 tsp Chilli flakes Adjust based on spice preference.
For the Mushrooms
  • 200 g Button mushrooms Clean and halve.
  • 100 g Oyster mushrooms Feel free to substitute with any preferred mushroom.
For the Finish
  • 2 tbsp Parsley Chopped.
  • 50 g Parmesan Can be omitted for vegan option.

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water and cook spaghetti until al dente, around 8-10 minutes. Drain and reserve a cup of pasta water.
  2. In a skillet, heat 1 tbsp of olive oil and sauté mushrooms for 5-7 minutes until golden.
  3. Add 1 tbsp of olive oil and garlic, cooking until fragrant for 1-2 minutes.
  4. Stir in chili flakes and reserved pasta water, simmering for 2-3 minutes.
  5. Combine spaghetti with the sauce and mushrooms, tossing to coat for 1-2 minutes.
  6. Stir in chopped parsley and sprinkle with Parmesan before serving.
